Il moraiolo è tra le cultivar umbre più pregiate, si riconosce dal portamento assurgente, la bassa vigoria e le foglie dal caratteristico colore verde acqua. I frutti sono di forma tonda, con un motivo puntinato che in maturazione ha come sfondo bellissime sfumature di verde, fucsia e viola scuro.

Moraiolo is one of the finest Umbrian cultivars. Its characteristics are: assurgent bearing, low vigor and typical teal leaves. The shape of the fruits is typically round and during the ripening gets a green, fuchsia and purple hue.

Fruttato erbaceo di foglia di carciofo e aglio selvatico. Amaro e piccante si offrono decisi e persistenti con un retrogusto di cicoria di campo. Olio elegante e ricco di sostanze fenoliche, dagli aromi marcati e dai profumi intensi si abbina bene a bruschette, verdure cotte e crude, carni grigliate, arrosti, carpacci, spinaci ed erbe di campo. Ideale per tartare e carni bovine in genere.

The Oil is characterized by a medium intensity grass fruity aroma, reminiscent of artichoke and unripe almond. The flavor opens with sweet notes instantly followed by a persistent medium intensity bitter and pungent sensation. The colour is green with yellow glares. This elegant and tasteful oil, rich in polyphenols and characterized by intense aromas and scents pairs remarkably well wiht: bruschetta, cooked or fresh vegetables, grilled and roasted meat, wild herbs and spinaches. Perfect wiht beef and meat tartare.
